Two Raw Divas, One Kitchen - Take III

As the end of the year is pretty much upon us, I thought I ought to bring it to a proper closure by getting you up to speed on Raw Goddess Heathy's most recent visit earlier this month.

If you're regulars of my Sunny Raw Kitchen, then you know that Heathy and I 'met' online a couple of years ago. We've been inseparable ever since, writing back and forth about our latest raw food experiments and discoveries (among other things, of course!) We have also been blessed to get together a number of times in the last 13 months.

Heathy's first visit was in the fall of 2007 and turned into a veritable uncooking marathon. Wowsers! It's a wonder we managed to accomplish so much in terms of food prep! We were in the kitchen from morning to evening nearly every day, somehow also finding the time to update our online friends on what all we'd been doing on a daily basis.

Heathy came for her second visit last September, when we were living in our tiny hobbit house at Ashinah. Even though the kitchen was minuscule, we did whip up a few wicked feasts (including several recipes from Russell James' Thai ebook) and pumped out luscious desserts faster than we could eat them. What can we say? There was lots of last minute recipe testing that needed to be done for her ebook. Tough life, eh?

We had gorgeous Indian summer weather for the most part of her stay, and got to spend a lot of time outside sunbathing, doing stretches and walking on the nearby logging roads. We even spent an afternoon at a natural hotsprings in Nakusp. I had every intention to post about our time together, but as soon as Heathy left, I got caught up working on her ebook and our move to another location. Plus, she did a fab job recounting her Adventures to The Sunny Raw Kitchen on her blog, so I figured I could get away with letting her be the spokesperson. lol

As is always the case, each visit has its own distinct flavor. This time around, with the release of Heathy's Just Desserts (the very first thing we did when she got here!), we didn't have anything specific to work on. It was nice to take it easy and not be 'on a schedule'. It gave us the opportunity to play to our hearts' content with the new recipe books I'd recently purchased: Matthew Kenney's Everyday Raw, The Complete Idiot's Guide to Eating Raw by Mark Reinfeld and Cafe Gratitude's Sweet Gratitude.

As we were in the prime of persimmon season, I served the Orange Persimmon Cheesecake from Sweet Gratitude on the day Heathy arrived. Super creamy smooth along with a burst of sweetness from the persimmon slices!


Now onto the sweet treats we prepared together ...

After such a promising start, we were both excited to put to the test more creations from the Cafe Gratitude's book; one truly after our own hearts... completely dedicated to desserts! The first one on our wish list was the Pecan Turtle Cheesecake. As you can see, we were happy to be side by side in the kitchen again!

Absolutely stunning looking and with an a-ma-zing flavor and texture!


I'll still have to work on that marble effect as the cake ended up with gigantic blobs of chocolate filling throughout. But you know what they say... "Practice makes perfect" and I intend to practice a LOT! lol


On a lighter note, we prepared the Raspberry Tart as our freezer was still full of berries that I picked last summer. We made this one with a mixture of saskatoons and black and red raspberries. The Irish moss glaze is so cool; makes it look just like SAD fruit tarts!


I was intrigued by the Spiced Chai Orange Cake. Although I haven't drank chai in years, I used to really enjoy this exotic blend of spices. At first, both Heathy and I thought the orange filling was a bit plain, but once assembled it did complement beautifully the delicate Chai Cake layer. This stuff totally grows on you!


But we didn't limit our dessert making to Sweet Gratitude (although I admit that it was very tempting!) Before I move on though, if you'd like more detailed feedbacks and photos about Cafe Gratitude's dessert book, you might want to pop by this thread.

We also prepared some of my original sweet creations. To think that I'd tried my hand at raw cake making only a couple of times before Heathy's first visit. Look at me now! Can't stop cranking those out! lol It does prove the point that I got to train with the very best, hey girlie!

Heathy had been planning to make my version of Chocolate Orange Cake, but didn't get around to it before she left. Since some folks on Raw Freedom Community had arranged to simultaneously make it in the course of another Project RAW, we hopped along for the fun!


It was the perfect occasion to tackle my Chocolate 'N Cream Charlotte as an extra pair of hands is welcome for this more intricate dessert. We had dehydrated the ladyfingers a couple of days earlier and were all set to go. I thought it would be a good idea to let Heathy assemble the Charlotte, just to see if she'd come at it differently. As a matter of fact, we did stumble upon a slightly different effect; the Whipped Cream must have been less firm than when I assembled mine, as it spread behind the ladyfingers. We added a final touch to the Charlotte by decorating the sides with pieces of dark chocolate.


It was served with a drizzle of Heathy's Chocolate Sauce and a scoop of Cherry Chocolate Chip Ice Cream from Matthew Kenney's latest book.



On a less extravagant note, we also had a Sundae night. Simple but soooooooo yummy! We made brownies - somewhat based on Matthew Kenney's recipe - that we warmed up in the D for an hour or so. We then chopped the brownies into smaller pieces and served them along with Vanilla Ice Cream, Heathy's Caramel and Chocolate Sauces and banana slices.

And lastly, we recipe tested one of Heathy's new creations that will be included in her next Just Desserts ebook: Peanut Butter Chocolate Caramel Tart. Pontifex said that of everything we whipped up, this was his favorite dessert! Must be a guy thing as it also especially hit the spot with Darwin, Heathy's hunny.


From the look of it, you'd think we had nothing BUT desserts, but believe me, we did have a bit of savory here and there. Somehow it just wasn't in the flow to take many pictures of main courses. *shrug* Amongst other things, we enjoyed my Cheddar & Smoked Veggies Pizza, Spinach & Mushroom as well as Greek pockets, Matthew's Silken Tofu, Russell James' Falafel and Hummus Wrap, his Spinach & Wild Mushroom Quiches which we served with Elaina Love's Mashed No-tatoes and his Vegetable Samosas with Cucumber & Mint Raita. (Guess we also had a bit of a Russell theme going on too, eh? lol)

I did manage to get a pic of the Samosas before we wolfed them down...
Definitely an interesting combination of flavors, but I gotta warn you: hold back on the garam masala!!! He calls for 2 tbs in the filling which completely overpowered everything else!


Oh, and we had zucchini pasta topped with an Alfredo Sauce and marinated mushrooms for dinner one evening.


Not sure what happened (Mosaica probably put a really good 80s song on Utube!), but Heathy and I dumped our respective projects and threw a little dancing fit in the kitchie.


The girls also found another vocation besides Raw Kitchen Divas. Heathy showed Mosaica and I how to French braid, so we also got to play hairdresser!

We kept the braids overnight and ended up with wavy hair the next day; an extremely rare occasion for yours truly. I mean, my hair is soooooo straight that when I tried to perm it in the past, it wouldn't even take! lol

Recipe of the Week: Butterscotch Shake

Sorry for skipping last week's recipe... I was way over my head in the kitchie with the Raw Goddess 'in the flesh'. Plus, I figured many of you already had your hands already tied, trying some of the yummy creations from her Just Desserts ebook.

After all the hard work and testing for Just Desserts, we were both happy to relax a little and try recipes from the different raw books I recently purchased.

One area we did get creative with, though, is in the beverage department. For some strange reason, my body has decided it doesn't really want fruit or green smoothies at the moment. (Go figure!) This provided the perfect excuse to experiment with almond milk and young coconut based drinks.

Heathy accidentally came upon the following combination yesterday morning. I couldn't get over how much it tasted like butterscotch! And to think of all the dessert possibilities awaiting...


Butterscotch Shake

Serves 2 or 3

3 med. frozen bananas
2 cups almond milk
1/3 cup young coconut meat
2 Medjhool dates
1 tbs lucuma
1 tsp maca
1 tsp vanilla powder (or 2 tsp vanilla extract)
1/2 cup coconut water, regular water or almond milk

Blend in high-speed blender until smooth.

Carmella's Note: If the shake is too thick, simply add a little water until desired consistency is reached.

Recipe of the Week: Cream of Cucumber Soup

As I was telling you in my last post, Don and I picked up a very special guest at the local airport on Monday: The Raw Goddess in the flesh! If you remember, Heathy came for a visit last November and we had an uncooking marathon of gigantic proportions. We had such a blast that she is now back for more food 'n fun!


Knowing how much Heathy and I love playing together in the kitchen - especially making decadent desserts - we came up with The Perfect Plan. Why bother spending time, energy and precious stomach space on fancy entrees when we can go straight to the good stuff? lol So our daily fare consists of juice, smoothie, soup, salad and, of course, a big serving of dessert.

Speaking of sweet treats, we've been doing some last minute recipe testing for Heathy's much awaited Just Desserts ebook. We've also been making good progress editing the written material together. (I'm her official editor in chief! ;-) ) I won't get a chance to finalize the formatting while she's here, but we're now talking weeks before the ebook is available. Woo Hoo! (If you haven't seen Raw Goddess Heathy's dessert creations yet, pop over to her site and you'll see what the excitement is about!) I guarantee you that it will be worth every second of that loooooooooong wait! The ebook isn't even finished and it's already clear that it will become my Raw Dessert Bible. lol

In the meantime, here's one of the lovely soups I served Her Highness. It's a simple recipe with just a handful of basic ingredients. But don't be fooled; the whole is much greater than the sum of its parts!


Cream of Cucumber Soup

4 romaine lettuce leaves, chopped (about 1.5 cups) (I use tightly packed cups)
1 cucumber, peeled, seeded, and chopped (about 1 cup)
1/2 cup water
1 T lemon juice
1/2 t crushed garlic (1 clove)
1/4 t salt
1/2 ripe avocado, chopped
1 T extra virgin olive oil
1 T minced fresh herbs, or 1 t dried (I use parsley)

Place the lettuce, cucumber, water, lemon juice, garlic, and salt in a blender and process until smooth. Add the avocado and EVOO and blend again until smooth. Add the herbs and blend briefly to mix. Serve immediately. For a chilled soup, refrigerate for 2 hours before servings.

Velvet's Notes: I love it, it makes 2 servings, but I drink the whole soup because it's so good. It says to blend in steps, but I add everything to the vita-mix and blend once until smooth.

Carmella's Note: The first time I made this, I used half the amount of lemon juice and it was still too lemoney, so I'd recommend going by taste.

Recipe of the Week: Raw Yummilicious Milk Chocolate


As I'm expecting Heathy's arrival tomorrow (woo hooooooooo!!!), I wanted to prepare a special treat for the one I've nicknamed 'The Ultimate Raw Dessert Queen'. Plus, it was the perfect excuse to try the new chocolate candy molds I bought during my recent visit to the city. I got to work and made a batch of Orange Goji Berry White Chocolate and a variation of Mishka's Raw Yummilicious Milk Chocolate recipe sans the cacao powder. As an afterthought, not sure whether there'd be quite enough, I decided to whip up some more of the Milk chocolate, just to be safe. Only it turned somewhat into a chocotastrophy (to borrow shannonmarie's term.)

When measuring the melted cacao butter, I realized it didn't yield the necessary amount. (I find it's always a hit-and-miss kinda thing.) "Ah well... No big deal," I thought, so I went ahead and blended the ingredients anyways. The consistency, though, was too thick and grainy. I was in a bit of a bind; I knew that by the time I heat up more cacao butter in the dehydrator, the mixture would almost certainly have seized up in the carafe (nasty business!) Hmmm, what to do...

Since I had some melted coconut oil all ready for a different recipe, after a moment's hesitation, I decided to go for it. I mean, it was right there, sitting on the counter... It seemed so much simpler, right? Wrong! One definition of insanity is doing the same thing while expecting different results, so go ahead... you can call me the 'Cacao Coo coo'! lol See, I've tried mixing coconut and cacao butter before while making chocolate candy a few months back, and let's just say it wasn't a successful experiment. Although the flavor was lovely, the mixture had more of a fudge consistency than hard chocolate. This time around, I managed to make matters worse by pouring the dodgy-looking mixture (to top it off, the oils had separated as well! Yuck!) into my little candy moulds. Not a good idea!!! I ended up having to painfully extract the soft fudge with a knife, remelt it and form it into a flat slab.

Ah well... Always something new (or not so new? lol) to learn, eh?

BUT, boy oh boy, does this chocolate ever taste divine!!!

Moral of the story, DO NOT EVER attempt to mix cacao and coconut butter together in a chocolate candy recipe, regardless of how good an idea it may seem at the time. lol

And above all, DO try Mishka's Milk Chocolate; it truly is out of this world!


Raw Yummilicious Milk Chocolate

2/3 cup cashews
2/3 cup agave nectar (maybe just a bit less than this)
2/3 cup cacao butter (liquified)
1 Tbsp lucuma
1 Tbsp mesquite
1 tsp vanilla
4 Tbsp cacao powder

Liquify cacao butter in sun or dehydrator. In Vitamix, blend all of the above, and pour into moulds or onto wax paper in dish. Freeze, cut, and enjoy!

Mishka's Note: I made the mistake of putting the cashews and dry stuff in the blender first today...big whoops. Definitely, put all wet ingredients in first, then add the previously blended cashews. And it all goes good from there!

Carmella's Notes:
~ I would recommend grinding the cashews first for easier processing.

~ I cut down on the sweetener a bit... used more like 1/3 cup agave as I prefer it not too sweet.


I think Her Highness should be pleased... ;-)

Two Raw Divas, One Kitchen - The Adventures - Part II

OK, I'm back! Now where was I?

Let's Crank Up the D!
Day 3 of our Raw Diva Extravaganza was a much awaited 'D day'. We were ready to rawk, babe! We went pretty much non-stop from morning to late afternoon, filling the dehydrator right up with savory goodies. Man oh man... The smell coming out of there!

First, we worked on creating a buckwheat and veggie dough that we would use both as pizza crust and for our next project: mini-pockets. We were really excited about experimenting with these - something I'd been meaning to do for months, ever since trying Alissa's calzone. The possibilities of fillings are endless, but we decided to make 3 different kinds of pockets: Italian, Greek and Asian (recipes now available in The Best of Raw Freedom Community ebook).

While Heathy worked on that night's dessert, I prepared Snowdrop's Sesame Nuggets (featured in my Recipe of the Week post here.)

We also came up with a burger recipe of our own that we formed into both patties and balls - the latter were meant for yet another new creation.

Lastly, Heathy had brought some dried porcinis with her so we got to try the Crab Cakes featured in the latest Purely Delicious that everyone had been raving about on Raw Freedom Community. Somehow, we misread the instructions and dehydrated the cakes at too low a temp, so they weren't fully ready in time for dinner. Ah well... They were superb nonetheless.

We served the crab cakes along with a tartar sauce, and a mixed green salad. Delish!



To my surprise, I found out that Heathy has never been 'the soup type'. At least, she certainly landed among the right folks to give her a taste of how delicious raw soups can be. It looks like it worked; my and Don's passion for raw soups rubbed off on her a little. In fact, we started that evening's meal with a lovely creamy Mushroom Soup that Heathy and I created. We were both super stoked at the result.




Dessert was Fairygirl's wonderful Strawberry Lime Mousse Cake, which we were testing for her book. In fact, she told me that, of all the desserts she's come up with, this one is her favorite, which is saying a lot! The pie that she submitted at the Simply Raw Pie Contest in Ottawa last fall was based on this recipe. Lovely, as you can see.




One more day zoomed right by!

Snowed In?
I forgot to mention that we woke up to our first snow of the season that morning. Yay, the return to lovely Winter Wonderland! Once everything got safely tucked away in the dehydrator, we couldn't resist taking a short break to go for a walk amidst the freshly fallen snow. Beautiful!

As you may recall, we live up a mountain. In fact, the road is so steep that you need a 4X4 to drive up the hill in winter. We couldn't help wondering how the snow would affect the upcoming potluck on Sunday, and Heathy's return the next week.

In the meantime, that also meant that it might affect our trip to Nelson the following day, as John's car wouldn't make it back up the hill under snowy conditions. However, we had a 'Plan B' up our sleeves, and were prepared to walk and get the bus in, as we had to pick up a few more grocery items for the rest of our uncooking marathon.

Three Raw Divas...
Once again, the weather cooperated; it rained throughout the night, and by the time we got up on Friday, the snow was virtually gone. Perfect! Heathy guided us through a few yoga postures, then we headed towards town for the afternoon. As soon as John dropped us off, we went straight to Rawfreshing Cuisine. Heathy had been wanting to eat at Chantale's raw deli ever since I wrote about it last summer.

I knew Chantale was planning a trip to Quebec sometime in November and wasn't sure whether she'd be around. Thankfully, as it turned out, she wasn't going until the following week, so we got a chance to chat with her to our hearts' content.

Everything Chantale makes looks so yummy, but in the end, we settled for the following...

Pizza Wrap


A soft veggie wrap filled with pine nut ''ricotta'', pizza sauce, pesto, veggies, lettuce and sprouts.

Mediterranean burgers


Sunflower and pumpkin seed burgers on sesame-onion ''toasts'' with veggies and Rawfreshing sauce - a sort of blend between ketchup, mayo and mustard.

Here we are, getting ready to enjoy a mega raw treat!



But that was only for starters... Next came desserts!

Chantale thought she was out of her personal favorite, Cashew Cheesecake, but then remembered she had a few pieces left over from a catering order. Lucky us!!!

We could see why Chantale likes this cheesecake so much: it's so creamy it literally melts in your mouth. She sure had us puzzled over its delicate taste; you should have seen us trying to figure out what was the secret ingredient! lol

We had a fabulous time, spending close to 2 hours in Chantale's raw haven. As we were munching away on her delicacies, Heathy and I toyed with a tempting idea: wouldn't it be awesome if we were to be raw food critics, touring raw restaurants all over North America? Ahhhhhhhh! Bliss, I tell ya! Not sure if our bodies could take it though. lol

Wondering how we managed to eat all that food? Me too! We were sooooo full when we walked out of there! In fact, we ended up having just a light dinner: Don's wonderful Green Celery Soup (which I just can't get enough of), and a modified version of Kate Wood's Sauerkraut Salad. Huh, and a teeny dessert later on. Does that count?

Two Raw Divas, One Kitchen - The Adventures - Part I

A'right! Back on blogging duty! ;-)
I was telling you a few posts back that I was expecting the visit of my dear online friend and raw chef, Heathy/Fairygirl. As some of you may know, I've been so fascinated by Heathy's culinary gifts that I even did a post on her back in February, featuring some of her amazing creations.

Her visit all came together very unexpectedly, and to say I was thrilled that we'd finally get to meet and uncook together would be a gross understatement. In fact, I could hardly sleep at the prospect!

Change of Plans
They say that if you want to make God laugh, make plans. Well, things indeed took an unforeseen turn on the morning Heathy was scheduled to arrive at the local airport. We were almost out the door in order to pick her up when the phone rang. Although we had never spoken before, I just knew that the voice at the other end could only be Heathy's. She told me she was stranded in Calgary due to fog. (Actually, I later found out that the Castlegar airport has been nicknamed 'Cancelgar' due to the high rate of flight cancellations in winter time. he he)

Remember my Calgary Rawkin Revel earlier this year? I spent a few days with Don's sister Sandy and her family, uncooking up a storm. Anyhoo, we managed to get hold of her, and she was more than happy to have Heathy stay with them while waiting for the next flight. Sandy and Heathy had arranged to meet in Australia last spring, but it fell through, so this couldn't have been more perfect!

Thankfully, we woke up to a glorious sunny morning the next day, so off we went to the airport to pick up our gal.

It kinda felt like we were going on a sort of blind date. hehe I knew that Heathy was a little nervous, wondering if we'd get along as well in 'real life' as we do in the virtual world, but we both knew that our deep sense of kinship and common passion for raw food prep was as real as it gets.

The final moments before Heathy/Fairygirl and I got to meet 'in physical form'... As you can see, we made sure she couldn't miss us! ;-)


Here we are... The Raw Divas united at last! It took a while to sink in that this was really happening.


As you can imagine, I had prepared a raw feast to celebrate Heathy's arrival. On the menu was Cream of Tomato Soup, a mixed green salad with my House Dressing, and the Lasagna Magnifica (all three from my 'Best of the Sunny Raw Kitchen' ebook.) I actually had the jitters a bit as I was working on dinner. "What if the lasagna didn't turn out right?" Never mind the fact that I'd made it countless times before, and it has always been phenomenal. Ahhhhh, the mind!

I was particularly intimidated to prepare dessert for the one I've nicknamed 'The Ultimate Raw Dessert Queen'. She'd told me she wanted to try my Banana Chocolate Cream Cake so I thought I'd make a variation of it.

We were all exhausted from this eventful day, and hit the sack early so as to be fresh and ready to begin our uncook-a-thon in earnest the next morning.


Kitchen Here We Come! - Day 2
Although we could hardly wait to get going in the kitchen, we started off with some exercises. (What discipline, eh!?! lol) I showed Heathy the Tibetan Rites - a series of movements somewhat similar to yoga. In the meantime, Don, the ever-devoted 'Juiceman', had prepared our usual morning brew: apple, carrot, beet, celery and ginger juice.

As we slowly sipped our ambrosia, we came up with a plan of attack. Man oh man! So much to make and so little time! We decided that we'd make the most of our time together by focusing mainly on our own creations. Heathy is in the final phase of working on her raw dessert ebook and still had a few recipes to test. We've also been talking about collaborating on a joint recipe book for some time, so this was the perfect opportunity.

At last, we were ready to get going. Woo-Hoo!

The More Mouths The Merrier
If you've been hanging around The Sunny Raw Kitchen a while, then you've probably heard about our neighbors and friends, John and Livina. Although they don't follow a raw diet per se, they're always open and game to try some of the stuff we make, especially the desserts. (Gee, I wonder why that is!?! lol)

Anyhoo, as Livina was away and knowing that John isn't too big on food prep, we invited him to join us for the evening meals. Lucky him! ;-)


On the menu that evening was Cream of Zucchini Soup, Mixed green salad with my House Dressing, Spinach & Mushroom Quiches, and Cheezy Tortellinis in Rose Sauce.

The idea for the quiches came to me a while back when I had more mushrooms in the fridge than I knew what do do with. Actually, I had mentioned the fact to Fairygirl during one of our chats, and she suggested I make mushroom quiches. I've already posted my first attempt here, but I also wanted to play some more along the lines of a savory cheesecake. What better occasion to do so than with Fairygirl being in the kitchen with me?

As soon as I found out about Heathy's visit, I started scouring my brain in search of dishes we could try turning into raw. I remembered the tortellinis I used to serve in my SAD days with a simple sauce consisting of tomato paste and fresh cream. We came up with the following:

And of course, the best part was dessert! I gave Heathy a hand in making her Chocolate Orange Cream Cake. OMG!!! I can't even begin to tell you how yummy this was! After drooling over so many of her scrumptious creations online, it was hard to believe I could finally partake in the bliss. Woo-Hoo! (Ooops, sorry guys! Don't mean to be rubbing it in! lol)

In fact, I'm munching on the last of it as I'm typing this... Mmmmmmmm
