Cashews a...Thanks Lau-raw for your kind words. ;-)<br /><br />Cashews are often used in recipes as they have a perfectly creamy texture once blended. Macadamia nuts give a very similar result. In the case of this particular recipe, I'm thinking that almonds ground to a flour would be your best bet. However, just bare in mind that the cookies won't turn out as 'white' unless you have the patience to first soak the almonds, remove their skins and then dehydrate them before grinding the almonds to a fine flour.<br /><br />I don't think nuts with a high fat content such as walnuts or pecans would work as well, but you could always give them a try.
